Chicken Lo Mein Busy Nights, Easy Bites - Episode 1 Ingredients For the Chicken 1 lb chicken breast or chicken thighs, cubed 1 tbsp soy sauce 1 tbsp hoisin sauce 1 tsp sesame oil 1 tsp baking soda 1 tbsp minced garlic 1 tsp ginger paste For the Lo Mein Sauce 5 tbsp soy sauce 2 tbsp hoisin sauce 2 tbsp chicken broth 1 tsp brown sugar For the Lo Mein 1/2 cup sliced carrots 1/2 cup sliced mushrooms 1/2 cup sliced red bell pepper 1/2 cup broccoli 1/2 cup sliced green onion Chicken broth, as needed for deglazing and steaming 1 lb stir-fry noodles (I found mine in the Asian section at the grocery store.) Optional toppings: additional green onion, sesame seeds, or your favorite chili crisp Instructions 1. Add the cubed chicken to a bowl with the soy sauce, hoisin sauce, sesame oil, baking soda, minced garlic, and ginger paste. Toss until the chicken is evenly coated, then set aside for a few minutes while you prep the sauce and vegetables. 2. In a small bowl, whisk together the soy sauce, hoisin sauce, chicken broth, and brown sugar. Set aside. 3. Heat a large skillet or wok over medium-high heat. Add the chicken in a single layer and cook for about 2–3 minutes per side, or until cooked through. Be careful not to overcook it. Remove the chicken from the skillet and set aside. 4. Add a splash of chicken broth to the same skillet and scrape up all those flavorful browned bits from the bottom. Add the carrots, mushrooms, red bell pepper, broccoli, and green onion. 5. Add another small splash of chicken broth, reduce the heat to low, and cover. Let the vegetables steam for 3–5 minutes, or until they are as tender as you like them. 6. Add the cooked chicken back to the skillet and pour in the prepared lo mein sauce. Toss everything together until evenly coated. 7. Prepare the noodles according to the package directions. Add them directly to the skillet and toss until the noodles, chicken, and vegetables are completely coated in the sauce and warmed through. 8. Serve immediately with any toppings you like.
